Iced Coffee Grapefruit Palmer
(Makes 2 Drinks)
A pleasant blend of grapefruit juice and chilled coffee, this icy Palmer with a twist is balanced with just the right tang.
1 1/2 cups (375 mL) prepared Starbucks® Cold Brew made with Starbucks® Cold Brew Pitcher Packs
2 tbsp (30 mL) Thyme Simple Syrup (see Tip, below)
3/4 cup (175 mL) sparkling grapefruit soda water
2 grapefruit wheels
1. Divide coffee and simple syrup between 2 tall glasses filled with ice cubes.
2. Top up with grapefruit soda water. Garnish with grapefruit wheels.
Directions to make Thyme Simple Syrup
combine 1/2 cup (125 mL) granulated sugar and 1/2 cup water (125 mL) in small saucepan; bring to boil.
Cook for about 1 minute or until sugar is dissolved.
Stir in 3 fresh thyme sprigs. Let steep for 30 minutes; strain and let cool completely.
Can be covered and refrigerated for up to 2 weeks.
• Spike the spritz with vodka if desired.
