Caramel Coffee Popsicles
(Makes 10 Popsicles)
The best thing about coffee popsicles? They’re as customizable as a cup of coffee. Make them just the way you like them: strong, sweet, or boozy!
1 3/4 cups prepared Starbucks® cold brew
1/3 cup caramel sauce
5 1/2 oz. sweetened
1 vanilla bean, scraped (or 1 tbsp. vanilla extract)
2 tbsp. coffee liqueur (optional)
In a large bowl, whisk together caramel sauce, sweetened condensed milk and vanilla until smooth. Pour in 8 oz. of cold brew and flavour with coffee liqueur (if using).
Pour half of the remaining cold brew (3 oz.) into bottom of popsicle molds. Freeze for 30-45 minutes until it gets icy and firm to the touch.
Place popsicle sticks in the middle and divide caramel mixture evenly amongst molds. Freeze again for about an hour or two, until firm.
Top with remaining cold brew (3 oz.) and freeze overnight.
To unmold, let popsicles sit at room temperature for about 5 minutes.
