(Makes 2 Drinks)
A simple homemade caramel is the base for this tasty iced latte that can be served as a refreshing afternoon or after-dinner treat.
1 cup (250 mL) strong brewed Starbucks® Espresso, chilled
2 tbsp (30 mL) butter
1/4 cup (60 mL) packed brown sugar
2 cups (500 mL) almond milk
1/4 tsp (1 mL) almond extract
1/4 tsp (1 mL) vanilla extract
1. Melt butter in small skillet set over medium heat; stir in brown sugar. Bring to boil; cook for 2 to 4 minutes or until sugar is dissolved and mixture starts to thicken and caramelize.
2. Remove from heat; stir in almond milk, almond extract and vanilla extract. Let cool completely.
3. Combine brewed espresso, almond milk mixture and caramel. Divide between 2 ice-filled glasses.
Tip: Turn this drink into a cocktail by adding a shot of Amaretto liqueur.
